Does everyone “tunnel” the anus and other gralloch questions!

Bigger the species the easier it is mate, if you can have the choice try learn on the bigger species.
Manipulate it with your fingers moving around for working the knife.
 
Wine corks in your pockets,point it like a rocket, fit it in the socket,cut around the sprocket, and don't lick your digets. 🤓
For chrissake! Sitting having my usual preprandial Rioja before the roast chicken and I read this. Don’t think I will ever, ever, look at a cork in the same way.

Or you can just cut horizontally at top of anus underneath tail, get fingers in either side, loosen off connective tissue and pull the tube out, making a ‘loop’ then cut round edge not having to jab knife in… much easier and quicker
 
I tunnel out the anus and it's quick. After tieing off inside when detached from the gut I just put a cut under the anal tush. Then insert my finger into the cut, push back towards the pelvic bone to stop any pellet leakage and then insert the index finger from my other hand, hook it round the poo tract and pull it out. Once it's all out just cut it away from the anus (it will be still attached to the carcase at the pelvic bone side). This is very easy.
 
I frequently shoot for others who deal with the carcass selling etc. So over time i have done most ways they all work but tunnelling can easy go wrong . In the field its very much minimum intervention ie bleed and green gralloch. I dont favour tunnelling, splitting the bone and lifting out gives a cleaner carcass , far , far cleaner if you mess up tunnelling.
suspended field gralloch with roe and smaller is ideal for most folks who dont have a larder and are taking the carcass for family and friends. Just make sure the walkers etc don't bump into your gut pile eh!

Do you split pelvis in field, and if so do you just use a castrom/folding saw? I know its a preferred method in Scotland.

no its bare minimum in the field, hand saw at the larder in a cradle . pluck remains in the beast but the rest goes and each is winched in . I am a firm believer in minimum work in the field , though fully understand some folks have no larder ( I dont at my own home ) Though i can borrow one if i really need and frankly on the larger species or a reasonable number of carcasses I would have to
 
I was once shown a tunnelling technique by a surgeon who did a lot of bowel surgery - it's the way they did some procedures in theatre :oops: I'll try my best to describe it in words but I should really take some pics sometime... It's like a slightly more refined / cleaner way of doing this:

1. Open the main body cavity and work all the poo down the colon away from the anus.
2. Use a pair of "lane tissue forceps" to grasp and hold either side of the anus - this kind of thing but cheaper stuff is easily available. I've got several pairs that live in stalking jackets Lane Tissue Forceps With 1 Into 2 Teeth And Box Joint 200mm | Health and Care
3. Cut around the anus, knife slightly facing out into pelvic cavity so you don't nick anything. Holding the anus with the forceps means you can keep some tension on the skin and make it easier to cut cleanly.
4. Once you've cut the skin around the anus, withdraw it and keep trimming around the rectum as you withdraw it. Similar concept to the Jelen video linked above.
5. Once you've freed it all off around the inside of the pelvis then it will drop back into the body cavity without any pulling, no poo squeezed out and no burst bladder. You can cable tie it if you want for belt and braces approach.

Watching that video was a relief. I half expected some film footage from an operating theatre !

Sensible. This is why i dont split in the field. Thanks for input, good to know how others do it
 
Just slimmed a bit off one of my Sika knife blanks , to aid in this action on the smaller deer if any one of you avid tunnel diggers fancies it speak to me . Just ready for polishing and handle / sheath give me a shout . As i say Its not my "usual" thing to do this in the field, though i have over the years done all sorts at the head mans request. Some fiends where recently asked to put a bunch of heather up the rear end of stags ( something about bacteria ? Personally i think it was something like the jokes we used to have played on us as apprentices ) LOL
