field dressing/butchery training courses

Hi,

As per title I would like to do a training course from the animal being shot I'm the field to being butchered in a slaughter house.

I can get by with the 'field dressing' bit but would like to be shown the correct / easiest way to do it.

Ideally would like something local (Staffordshire/Derbyshire)

Or does anyone know I can find a list of such courses.
