First time Venison on Toast

for me the usual venison fare on toast is either sliced heart if its not been knackered with the shot
or the inner fillets of of roe

i usually hamme rinner fillets flat with heel of handm hot pan 50/50 oil /butter slat pepper and hot & fast then rest while toast is on....
butter it and smear of either brown sauce or english mustard and have with a good cup of tea

do same with slices of heart
