After shooting a nice buck last night around 9pm, field dressed then home, hung up in an airy cool barn overnight until now 1400.
i cant get access to the chill until thisafternoon, its been coverd with a fine mesh bag to prevent flies as much as possible, but with the warm weather we have today, they have managed to get some eggs on the carcass, Just curious if after a bloody good hose off and put into the chill this will still be good?
 
I wouldn't wet them personally, I'd try and get out by either trimming the area or carefully with a knife and strong kitchen roll , get it dealt with as soon as possible and get it in freezer , should be fine for your own use
 
Trim off, check bum hole (Deer) and under diaphragm there sneaky little buggers.

If it not possible to chill PDQ i would skin, cut into primal s and put in a normal fridge until you have time to butcher.
 
I’ll be perfectly honest, seventeen hours before chilling in this weather, even in a ‘cool’ barn, I would consider that spoilt.
Ask @WalkedUp to tell you the tale of his two fallow bucks.....

His usual larder facility was unavailable, and it was at least that long before he managed to get them into my chiller, on what was the hottest day that year, and then my chiller gave up the ghost!
It must've been close to 24 hours in the end, before the carcasses were finally brought down to temperature.

While I most certainly wouldn't have sold any of the venison it was all consumed between two households, and was delicious!

Meat is far more resilient than most people realise.
While it's essential that we stick to FSA guidelines and "best practice" when producing venison for sale or gifting, there's a lot more leeway can be allowed if it's for home consumption only.
