Lunching on eye of round from my first roebuck with some fried quail eggs and salad. Got to love working from home.
Have you ever tried the quail eggs smoked? Soft-boil, then cold-smoke fro a couple of hours. It takes them into the realms of the divine! I used to make mini Scotch eggs with them. Miss keeping quail, that's for sure

I haven't, but that sounds amazing. I do make mini ramen eggs out of them - boiled till they have jammy yolks then marinated in mirin and soy sauce for several days....

What process do you use to get them into long thin strips? Ive made both venison & duck jerky before but just by cutting the meat into thin strips, marinading for 5hrs then into the dehydrator until ready.
