Look good, like this idea - did you cut anything fatty through it or were they pure?

No, just minced trimmings with a bit of seasoning. I put in a little olive oil but could have done without it, as it made the mixture a bit harder to form properly.
 
Lovely stuff, will give them a try (or a roe version at least). I need some ground closer to home because I keep seeing munties on the roads near my new place!

Should we be requesting recipes alongside these pics?!
 
Last night we had roebuck backstrap with roast veg (potato, sweet potato, parsnip, onion, garlic).

Tonight we had a mix of roebuck backstrap and roebuck haunch steak, with the same roast veg as before, with the addition of mushrooms.

Completely forgot to take photos, but l reached for the knife and fork rather than the camera/phone!
 
Made a fallow buck backstrap Katsu curry along with smoked fallow buck sausage last night, the family is very quickly coming round to the idea of venison as a staple in the diet

coincidentally I was pondering katsu last night, but wasn't sure how the top round would turn out after being pounded into a schnitzel

I rubbed with salt and pepper a couple of days ago then the night before we made poured a Katsu source over it and left it then it was cooked with more, was really quite nice!
 
This Sunday's lunch on a very wet October day. Roast Beef, Mashed Swede, Roast Potatoes Sprouts and Yorkshire Pudding with pan gravy.
