After my stalk with @Norfolk Deer Search I skinned and butchered the CWD with my knife made by @snake_2586

Made myself a scrap pile and had a go at sausages today, they turned out quite well.

CWD Rosemary & Port Sausages.




I used more Port than water.


Couldn't fit much casing on the nozzle so had to do shorter runs.




They taste bloody brilliant and very festive.
