Fridge time for mince.

How long would people consider it acceptable for mince to be in a fridge @ 1° C prior to further processing into burgers / sausages.

A couple of days. A bit longer if vac packed.
A better option is to put aside the meat that you're planning to mince, vac pac if poss, and keep that in the fridge. Can do a week or more that way, easily. Don't actually mince it until you're about to use it.

This is why SD is such a great place to ask questions. I’d never even thought of that . Got some big vac bags.

I would put in the freezer for a few hours prior to mincing. And any water/red wine or whatever your choices. The cooler the mince and ingredients the lower the risk of bacteria growth.

It definitely minces better if you chill it right down. I find that 20 mins in the "fast freeze" section of the freezer is just enough. If I left it as long as you suggest it would be solid!
 
Yup I leave an hour just for meat is fine ….. I also put the mincer head & blades / plate in freezer for longer if I remember
 
I leave it in the fridge until the outside turns greenish grey, then give it a stir.
If it smells ok I use it within 24 hours, if it’s a bit off the dogs get a treat.
