Gland in Haunch

I have generally been bonning out haunches before stuffing and rolling. This also gives the opportunity to remove a gland (I forget the name). If roasting on the bone do people try and get the gland out or just ignore it?

What's the technique for getting that one out if you're roasting on the bone?

(I don't cook (or sell) any venison on the bone, and always remove glands, but been cutting up sheep for years, since I was a child, long before I even knew glands existed, and never removed any!)

I guess the only way would be to cut out from the outside but then retie the leg up so that the joint is all together.
Personally I remove all cwd and munty haunches from the bone and open them up to create a large steak which can be cooked like a cote de boeuf or a chateaubriand, so all veins / arteries and glands are removed.

I have tunnel-boned a leg of lamb before and stuffed the ‘tunnel’ with a herb mix and that was good, but I didn’t remove any glands.

On a leg of lamb which I do cook on the bone I remove it when carving.

Is it the popliteal lymph node?

There is a short youtube on this, removal is some say to prevent a strong gamey flavour from developing.

Maybe someone could remove the glands, fry them and eat them on toast and let us all know how they taste. Then we would know how much it matters!
 
I'm really pleased this has been posted! I've been wondering about for ages after watching a YouTube video of the glands being removed
 
Remove if opening up
If leaving as bone in haunch roast
Forget about it and worry about trump as some on here seem to all day
Pour glass o wine and enjoy said haunch roast with a guid merlot
