White discharge from haunch

The lymph system is one of the primary parts of a bodies defence against infection. Stray proteins from bacteria, viruses and abnormal cells are captured and taken to the lymph nodes where they are filtered out. Pus either at a wound or in the lymph nodes is pretty much dead white blood cells and dead bacteria etc. the lymph system is there to filter out all this rubbish.

Difficult to determine exactly whether a pussy lymph node or puss in the meat is a challenge. A lot depends on the behaviour of the deer before it was shot. Did it look fit and healthy, or was it hobbling along looking sick? Were its eyes bright, ears pricked up etc?, was the coat in good condition etc? What about al the lymph nodes in the gut or at back of head etc?

You really need all of this to give an informed opinion. Fundamentally though we should only be putting fit and healthy animals into the food chain.

Yes propper cooking removes most chances of the meat affecting who ever eats eat, but these days we fo store meat in our fridges alongside plenty of other food that we eat fresh (salads etc) so chances of cross contamination are quite high.
 
The deer was completely heathy otherwise, good weight, condition all other inspection normal. It appears to be an isolated lesion. Thanks all for your input.
