Put the oven on gas mk 6 and put tomatoes (about 2lbs weight) on a tray drizzled with garlic oil .
Rough chop 2 onions and your last pepper from the garden .
Into a pan and slow fry in garlic oil or add as much garlic to rapeseed oil as you can stand,let simmer on a low heat till soft .
Add a pint of veg stock and a single spoon of sugar and bring to the boil then simmer.
After 20mins in the oven add the collapsed and floppy tomatoes to the pan and stir together.
Add 2 knobs of butter to thicken and simmer for about 30 minutes.
Pour the lovely smelling mixture into a blender and blast to a fine texture Unless you like it rough of course ,then either freeze for a lazy meal or serve up with a dollop of cream and some crusty bread
