Jerky...

She who must be obeyed and myself have invested in a Ninja Foodi max. With two drawers to "air fry" all sorts of things. It does seem quite good although it's yet another thing to clutter up the kitchen worktops. They're all the rage, don't you know.

Anyway, one of the settings is "dehydrate", which over a number of hours allows you to dry such diverse things as beef, chicken and salmon, with or without them being marinated before, thus in effect making jerky. And also such things as bananas, apples and all sorts of other fruits.

I've put some apple slices in to try it out. Takes 7-8 hours. Just wondered if anyone has delved into this and what results may be had.

I use my dehydrator to make biltong, and find the results perfectly acceptable.

These are the instructions I tend to follow:

One problem you’ll have is that you will presumably have to lay the biltong horizontally, whereas with a dedicated dehydrator like the Excalibur the biltong can be hung vertically, as in a regular biltong box.

I’ve also made jerky, using a jerky gun sourced from the States so that the jerky is spread in horizontal strips to be dried, but I far prefer the biltong. The dogs, however, love the jerky!

Just make sure that the temp is 30-40c else you will case harden the meat and it won’t dry correctly.

Interesting. I have an air fryer and it is quite a versatile little thing. Will check see if mine has that function.

It would be useful as I ate a crap ton of my mates spicey jerky the other day and I am sure he would appreciate me replenishing the stock. He does it using traditional methods, I can never be arsed. I think he did the last lot with minced vension rolled out from memory. It was definitely tasty.

I suppose you could cobble something together to hang the meat, although there's trays with holes in my device which will to some extent alleviate that.

This is the thing I've got. It's not awfully cheap but it does have two pretty big compartments and it's certainly excellent at doing the likes of oven chips and nuggets cheaper and quicker than the oven, so is useful for when the grandkids land and the kids abandon them. They come out better too. Only another 2h40m and I'll see what the apple slices are like.

Here, “Proper“ biltong is done in biltong box
Also have cheats jerky gun ( mince) and do them in dehydrator on grid racks and done in 6/7hrs at 60/70c
And these at damn fine Altho not as good as proper biltong, but quicker 7hrs vs 3-5 days !
I have one of those ninja foodie air fryers and it’s the 14 in 1 round shape so not ideal shape or size so I’ll stick to dedicated dehydrator altho it has a dehydrator function .. but it’s bloody awesome at pressure cooking and fantastic for what else it does & works out cheaper to run by a bit! Important for some in these times. I have thought about trying proper biltong in the dehydrator instead of the box but not tried yet

When first started I did the cheats jerky in normal oven set to 90/100c and left oven door open 1” or so at top … dod for roughly an hour then turned strips over for another 1.5hrs. Then removed and let cool to ambient and worked ok
