Killing Out %

Hi All

does anyone know the average killing out percentage of reds, fallow &/or roe? And of the finished meat, what quantity of trimmings would you expect as a percentage of dead weight?

It's higher than eg sheep, I was told this at the Rowett 30 years ago, but I'm afraid I'd not pass the memory test now!

I’m all seriousness that’s very little waste I strive for the same , and bloodshot or waste goes to the dogs / ferrets so fair play to you My terrier was happily munching his way through a roe bucks rib cage yesterday
 
Depends on where the shot was. I reckon on s fallow, you get, in pounds, what the carcass weighed in kilos for a shoulder shot. Head or neck, add 10 per cent.
 
For reds I recon a carcass in kg game dealer weight will yield about the the same In lbs actual meat , eg 30 kg carcass with skin on gives 30 lb meat .
 
50-60% meat (50-40%waste) on roe including trim for sausage etc
Higher on red, sika & fallow
Make some cuts like bone in haunch to roast and some sexy loin cutlets or guard of honour etc and you can get waste down but it eats time (at the speed i butcher anyway) some people will pay top ££££ for pre prepped cuts like that though
There's money in the ears, lower legs, bones and damaged meat to the raw dog food nutters these days which is nice
 
Heads with antlers get sold, heads without get eaten by various animals and birds here, skins are used by a lady to make things out of deerskin. Not too much waste.
