Kitchen knives

Looking for a new set of knives.

I have a budget of no more than a 100. Can anyone recommend a decent set please.

What do you intend to use them for specifically, or is it just a veg peeler, small med and large you're after?
A magnetic strip will be less dear than a block, and takes up/away no worksurface space.

Essentially yes, and when or if the game season starts game every week, but I just breast them out. I'm yet to get I to stalking but when the chance arises doing a carcass.
 
These are ok, my favourite kitchen knives are ones I made, well put handles on. But the pro cook ones are good. The x50 and x70 ones are best IMO, the x100 ones are too hard and have a brittle edge.
 
Two things come to mind for me - unless your CDO means that you have to buy the same brand of knife, shop the sales for the best of what you might want across all brands; and I'm really surprised Wusthof has not been mentioned. Their Gourmet range of knives are pretty reasonably priced for what you get. The classics are nicer but no sharper (IMO).
 
I buy the classic Sabatier black handle with 3 silver rivets. The quality can vary slightly but I pick them up one by one hence only buying exactly what I want.
1) large chefs knife
2) medium Japanese style veg chopper
3) small/medium general
4) small serrated

the good thing is this style is so timeless you can replace and add as you go along. Perhaps a little more than £100 required, maybe £150.

Adding something to the mix - Fiskars. I have had mine for the last few years and have to admit that Finnish quality is second to none. Never sharpened over the years and still cuts like new.

Have a look at the global knives, I have a set that are about 10 years old and a quick strop they are all shave ready sharp.
 
I like the look of the Old Hickory kitchen knives ....moonraker knives sell them.
Carbon steel and wood ...no dishwashing.
Set plus individuals.
Don't know how they shape up....Anyone got/tried them?

Someone on here recommended these for gralloching and I bought one: Cutting | Kuhn Rikon.

Certainly seem sharp and good value. My wife loved the one I bought and has stolen it. I have had to buy a whole load more for her and me.

(I also have a Victorinox boning knife and fine steel.)

I would love a set of these, I think they are stunning but come with a price tag to match. Spent 20 mins This avo with my sabatier set and they are all razor sharp.... that stop me pulling the trigger on global.
 
So many pros use Victorinox, they are great, an 8 inch chefs wide blade, a boning knife and some small veg knives will serve you and your next generation when you pass them on one day. You might also get their big steak knife which I really like for bread as well. Fibrox handle is very practical but I prefer the rosewood handle for the kitchen. I've ended up with a mixture of handles.
