Larder vs. Butcher question from a newcomer

if there is anyone near Bedfordshire that would like to know how to butcher a deer i would be more than willing to show you how

The most important thing for a recreational stalker is to know exactly what he is going
to do with anything he shoots.... before you shoot it...
This depends much on the weather and time of the year.


a large spare fridge and freezer is the most useful thing to have as your wife will not like your deer
dripping blood on the butter and cheese. They also have little critters in their fur which
like to go walk about.:-|

get a plastic ground sheet, box, tub, bath to keep your animal clean
take two coolie boxes and freezer ice blocks out with you in summer,
get a table with washable top, plenty of freezer bags and labels

In the summer months consider skinning and quartering the deer
straight away and into cool boxes, Flies are the big problem

Autumn spring and winter usually see night temperatures dropping to near zero.
this will cool your deer right down. and you could use a clean garage or shed for a few days
If in doubt dont shoot, a dead deer in your car boot in summer is not a good idea

Mike like yourself when we all started stalking the thought was where to do the correct handling of the carcase..
Forums like these are great for getting help and long may it continue!!!
If you have room for up upright chiller then ask your friends to keep a look out for one - especially when shops are having re-fits .
I was fortunate that a stalking friend gave me a contact when such a thing happened i got mine for £20..

I was fortunate enough that i had a kind offer in using a friends which as always is most appreciated , but when i got my own ( which i share with a friend ) it saves me a 40 mile round trip , plus its nice to came home after a summer stalk and put the carcase into the chiller as in best practice guidance!!!
This way when you find yourself a butcher ( who handles game ) you can arrange a time to drop it off which mutually is easy for the both of you!!
Or when you have the time to butcher it yourself!!
I used to hang the carcase in the chiller then organize with a butcher / game dealer / the drop off time so i could skin and then deliver and arrange what cuts you want and pick up time!!
If you use a game dealer you probably be able to drop off carcase in the skin - but you can arrange this with them if you choose this route..
Now days though , i have been very fortunate to start to learn to butcher myself with help from other people who have been and who are in the trade!!!
I must say too , its great to be able to know the health of the animal / where it came from / process it and then eat such fantastic - healthy meat!!
Good to hear you are doing your DSC 1 too , this will teach you best practice in handling your carcases so they are in the best condition for the table!!
When passed too , you will have your hunter number for traceability when handling carcases!! , but you will learn this and more on the course - sure you will enjoy it as its a great course and its where the learning starts from!!
Having hands on experience too with experienced stalkers and butchers is a fantastic asset too!! ( dont forget a little gift of a thank you goes along way ) ;)

Thanks Interceptor, Lots of interesting info. Looking forward to the DSC. I'll hold off on the chiller until I get my FAC though I think. Where are you in Cornwall then? Do you stalk round this way?

Wouldnt wait til FAC for a chiller .... In the last say 5 yrs I've seen coke fridges more than double in price as us recreational guys cottoned onto them.

start looking now because may take you long enough to come across a cheaper one,
keep eye open for shops closing down or re-fitting
if you see one nip in & ask .
guys on here willing to share / help folk out someone local bound to help you / show you how to break a carcass down .

I have a fridge but before I did I hung them in the shed in autumn winter
the summer ones I butchered the same day

whilst hanging does help it is not essential

get yourself on youtube and DIY
easier than ferrying carcases around town to butchers who may or may not be covered to do it for you on premises
and.....more importantly you learn and its more rewarding
