This sauce,for 50p I think is delicious.
My wife isn't too keen on pink venison.
So I fry the loin whole in oil, baste in butter so its blue then rest for a minute or so.
Turn the pan off, then slice and add back to the pan, starting at 12, and flipping.
Rest and season, heat the sauce in the same pan.
Turns out perfect everytime, fork tender and couldn't be simpler.

That's how I cook my venison steaks too. Fry off a big piece then slice it and fry the exposed edges too. Nice and rare in the middle but crispy on the outside. Usually served with fresh bread and an unhealthy amount of salted butter🤤

There's something so satisfying mopping up with good bread and butter.

I find that sauce a bit too tangy for my taste, so tend to make my own from a bechamel base. You're right though, mopping up that sauce is a delight 😀
