Folding mechanism adds 100g to weight. The mechanism has two pivot points, and folding the stock is two phase (since it's mechanically impossible to keep your finger on the lever whole time). Stock locks in the folded position, and unfolding uses separate button and is single phase.
I don't have the stock, just played with one for few days. MDT has drawings on their website, that include main dimensions. Have a look there.
From simple measurements I'd say the stock in folded position extends about 11-12cm rearwards from your trigger. This is pistol grip, actual stock is bit shorter. Of course some variation due to different actions and so on.
Another point I had not considered when I went with the folding option was that the cheek rest is not readily adjustable in the field (you lock it in the desired height with 2 Allen screws) and to remove/fit my bolt (Tikka T3X) you have to fold it! If you are like me and always remove the bolt for transit and storage, that would be a major issue!

I currently have the ESS chassis with folding adapter and I'm able to open/close the hinge of the buttstock with a single thumb so I wonder if they've changed the design??

See attached. Another good point that a fellow SD user advised me on is that the hole in the base of the CF pistol grip whistles in the wind. A 25mm (1") grommet fits perfectly. I have not filled it permanently with something as he also recommends putting a hand warmer in it in Winter. Not tried that yet but I'm planning to!
