Latest batch of Munty Bangers.
Minced lamb skirt for fat content.
Some in hog case others in lamb casing .
I think I prefer the lamb casing even though it is trickier to handle.
Trying get a Toulouse style sausage in the hog cases so I can use it with pheasant legs in cassoulet. Any tips appreciated.
I just love this side of stalking.
