However, we have six species of deer in the UK; not 3. Might be worth amending your poll.

I like a red calf or a sika hind to eat.

I like a red calf. They're a nice size to deal with too and butcher at home.

Not tried Sitka but imagine it is very chewy and sappy? It will likely give you splinters in your gums if you eat too much, however it is certified Vegan if that's your thing?

I've heard there's nothing wrong with the Sitka Blacktail Deer. captdavid has changed the poll to sika.

Red first, preferably a follower/yearling. Followed closely by red hind/stag (well before rut though)then roe, munty and fallow. Not eaten sika or cwd so can't comment.
