So, I have watched his videos over the years. Now that I have started butchering selling my own venison I thought I better up my game and relearn my butchery skills. Well, when I say relearn, what I mean is learn to do it properly. sigh.

so last night watched him butcher a muntie in about 20 seconds. The workmanship was brilliant, the job perfect.
If you are new to stalking and butchery then I can highly recommend his videos.

But he is still a complete and utter git….. Jealous? Me? Next you will be accusing me of wanting to win the monthly draw. 😁
Now, need to buy a butchers knife, another boning knife and a saw. But that is just an aside.

 
I also watched that recently, the way he got the legs off was quite impressive and looked really nice, definitely want to try it that way next time!
 
@sauer got me watching. I followed one of his vids on butchering a lamb (this was physically more sheep than lamb) and it was massively beneficial.

It's always a real pleasure watching an expert do what you would like to do, but can't! It just illustrates how inadequate your knife skills are (and without the numerous cuts and light injuries that I normally end up with!:lol:)....... I also like watching skilled filleting in a fishmongers and this also makes me realise how incompetent I really am..... more practice needed methinks!:D
 
Great video's have found them very useful. Mrs tried to get his cook book Merchant of Venison from NOB's Web site nightmare had to get refund think it was a scam website.
 
He is good - but he has changed over the years.
I preferred him before he got famous, don’t know why, just fell out of watching him as he seemed to be moving up market.

As for butchering venison, I still only use a knife as the butcher on this vid shows how to do a whole roe with only a sharp knife. (Set of 3vids on butchering plus prologue on how he skins a roe)

 
Experts make it look easy……..he made it look very easy ….given my butter fingers I would probably be hobbling queueing outside A and E with a knife sticking out of my feet and my hands covered in plasters😳
 
Exactly how I break down my fallow but I do it hanging and quicker than that. I'm sure he's not going full pace either 👍
im certain he isn't going at full pace for his videos - but that is what is so good about them. Too many of these 'how to do it' butchery videos are just a blurr of mad knife skills with little time for explanation or slowing down the process. at least the viewer can follow his progress and method through each of the stages of breaking down a carcass.

I've also taught myself from his videos on youtube and my own mistakes.
