'New posts' is customisable and you can choose which forums to see and which to ignore. 'What's new' shows everything and is not customisable.
When you press 'New Posts' (not 'What's new') you can set only the forums you're interested in, the rest will be ignored. On each Forum page (e.g here is one) there is a "Watch" button you can press.

You can set it to give notifications, or switch the notifications off. If all you want is customising ‘New posts’ choose “Don’t send notifications”.

Then in the Forum -> New Posts section (again, not 'What's New') you can tell it to filter "Watched content" and tell it to "Save as default"

Now it gives you only the forums you listed as Forum ->New posts. You can check which forums you "Watched" in Forums -> Watched -> Watched forums

Now you can press "New Posts" and it will show posts that are "Unread" and "Watched".
