Sharpening Steel

I believe Gustav Emil are pretty good....according to my butcher friend who dribbled over my Emil kitchen knives that I was given
 
Henckel or wusthof make very good steels and knives, ive got the henckel but dont use it on the knives...im too afraid of buggering the knives. :D
 
I sharpen all my knives and axes on a japanese water stone, I bought it off t'internet as i couldn't see one in the shops. It does a very nice job.
 
If you want a cheapish solution then a ceramic steel from Ikea. I bought one just to see what they were like and now favour it over everything else*. I can get a shave sharp edge on a Clipper in no time.

*Including Japanese water stone, Fallkniven DC3 & DC4 and diamond steels (too coarse imo)
 
I use knives for a living ( meat inspector ) and swear by the German make F Dick , will last you a very very long time
