I know it looks like doner meat, but here is a sample of venison bacon which I did myself following on from a video I saw on YouTube on how to make it. It's not quite bacon like we know it but I can confirm it's ok and a bit like spam I suppose. There's not much to it really apart from 50/50 minced venison and pork shoulder, some maple syrup and cinnamon sugar. Smash it in a baking tin 1.5hrs @ 160c or whenever it looks and feels cooked through the middle. Let it cool and then slice into strips.
I fried the strips in a pan with a little oil and they were lovely tasting. A little dry I suppose but never the less, something different and experimental.
I vac packed strips in piles of 8 for use later in the week in various recipes.
