venison fat

Had a fallow last week that had the most fat on I have ever seen on a deer!
I picked up a fallow a couple of weeks ago in similar condition. The ones I've seen have had a very good summer for piling on the pounds... sadly my better half says the same thing about me

The venison here tends to be very lean, you can often get fat on fallow, and it is prised for use in making burgers etc as the pure lean meat does not hold together to well and some people use pork belly fat to mix with the venison
But our weather is a tad harsher than yours, and not to many Elk around either

I wouldn’t necessarily say that I prize fallow venison fat, it is like other deer fat; too high a setting temperature and thus is like eating wax. Absolutely no good for any food I’m my experience and thus has always gone into dog food or the bin.
Young wild boar fat , Beef , pork , or lamb fat, is more like it in my opinion.

Sika carry more fat than other UK- species. I have collected this from sika hinds and used in my deep fat fryer it to cook chips
Did a couple of hinds over Xmas and the thickest layer of fat was maybe 30mm o_O

The fat stripped from venison makes excellent bird food, the Robins in my garden absolutely love it.
I'm glad that they do cos I think it's like candle wax and wouldn't be tempted to eat it.
On a cold morning I've actually heard bits of it crack as I cleaned a carcass
I've been assured that caul fat is edible but haven't been tempted to try it - yet
 
I tend to leave the fat on Roe in the burgers and quite enjoy it but I never eat cold burgers!

I did read that it is a good cholesterol absorber and after a conversation with a doctor that had me in hospital for a week with suspected angina; she told me I wouldn’t be eating red meat again when I told her I ate a lot of venison, even though I said it was supposed to be good for cholesterol. When the scan eventually came back she came in all sheepish and said my arteries were healthy. I said “ what for a man in his fifties?”, she answered quietly “no!” So I said “you mean for an eighteen year old?” and she quietle said “yes!”. “So I’m fine eating venison then?” I asked with a cheeky smile. She answered “I haven’t really got an argument for that one have I?”

I’ll be eating it in future boys!

Unfortunately it doesn’t have the same effect on cancer!
