With the game dealer prices so low it’s been nice processing and doing more with venison for own consumption. Today I made some venison (sika) jerky. It was marinaded for 48 hours, it tastes out of this world! Don’t ask for the recipe as I don’t know, I was just pouring various quantities of soy, Worcester, teriyaki, bbq, tomato sauce, salt, pepper, garlic granules, brown sugar, chilli flakes, chilli sauce and smoked it at 90ish degrees for 3-4 hours. Will definitely be doing it again! Only downside is the time to produce to amount of produce ratio is pretty low!
