Venison Offal Fridge-life

3 or 4 days in the fridge is fine, but why would you want to? For the best eating experience, get it in the pan while still warm from the animal.
100% agree it’s the best around, just wondering what’s best as it’s for a mate on the weekend.
 
Like any meat , people make the mistake of throwing it in the pan straight out of the fridge,,,,,,,,,,

Let it get to room.temp, then cook it , its the difference between ultra tender and tender ,

Let the muscle strands relax , same as letting it hang ( wether it's a steak or venison )

Think you might have hit the nail on the head there. She's a big fan of the NINJA in slow cooker mode too.
 
How long would you leave Heart, Liver & Kidneys in the fridge before you wouldn’t eat it? Shot yesterday (14/02) would it still be alright on Sunday?

Also, do you guys notice much difference if it’s been frozen before eating?

I usually eat the liver that day or next as its my favourite bit (muntjac).

Heart, sometimes with it if Ive neckshot, or if I have a couple, later in the week.

I dont eat the kidneys. All offall is good for several days once chilled. The supermarkets have long Use By dates
 
I freeze my offal and eat it whenever. Never noticed any difference except that it does tend to get freezer burns if left in the freezer for too long.
This shouldn‘t happen (freezer burn) if it is properly vacuum sealed, but I remember it well from before using a vacuum sealer (not in a good way!). One of the first things to go at the market was packs of roe liver, fresh or frozen, kidneys ditto, people were very keen on it, understandably, we very much like it too.
 
I freeze all mine, and then take it to a friend who cooks it up and feeds it to their dogs. Generations of their hounds have been fed on deer pluck, and none of them have ever complained! I took round nine frozen vacuum-packs of it on Sunday.

I wash, bag and freeze the offal then defrost and dehydrate into dog chews. Some clients and friends like liver so wash and vac pack that for them and keep in freezer
 
Eat liver ASAP as I find texture deteriorates but will be OK for 4 days. It does not freeze well so would cook and freeze if need be. Heart and kidneys freeze v well. Do not over cook liver.
