Hi all,
Out of the six deer species we have here in the uk what is your favourite cut of venison and from what species?
 
Thanks for the replies so far I have only taken fallow,roe and munty and I have to say my favourite is munty backstrap followed by fallow I wasn’t to keen on the roe but will definitely be trying it again
 
Sika, fallow, red and roe I like all the same just when I've eaten enough of each one and fancy a change.
Muntjac I'm not into it. CWD I've only ever had 2 and it was nice. But not eaten enough to know.
Prefer female in all of them.

Red ribs with the meat by the brisket area is thick and fatty....
black pepper salt oil in a hot oven then over the hot charcoal for a few mins...

Not bothered about other meats.except guinea fowl, Hare or rabbits on occasion.

Because not many people shoot them and cut them up to eat compared with the handbag deer lol

Exactly! My reds are straight to the dealer. I’ll most likely of unknowingly eaten it in restaurants.

The vast majority of my venison is roe, which I think is superb.

Sika is to my mind the best, followed closely by MJ. With sika beware, trim that fat away. My butcher processed an early season hind for me last year and the fat was overbearing. And it’s pretty grim stuff, sticks to cutlery and pots-belligerent just as you’d imagine!

A haunch of MJ oven roasted quickly with a good olive oil and rosemary baste is as good as it gets.
 
Sika CWD fallow roe muntjac, don’t think I’ve actually eaten red, it’s all gone to the game stealers.

I eat all the cuts, some days loin steak other days venison meatballs in tomato sauce hit the spot.
