Where does venison meat come from?

The venison I sell averages about £18 / kg, with the top priced cut being £42 / kg.
It's not difficult to sell. Customers feel that they are buying into my story.
If you want quality prices then you've got to have a quality product with provenance. Once you've got that quality product then ffs don't discount it.

Higher prices for better cuts is understandable and Im sure your customers are coming to you for Venison (maybe Lamb and Mutton too) because they are already in the market for it, want a single sourced product and like your quality.

I dont think in a supermarket the majority of the public seeing £6.99 for 400g of Vension next to 500g of Beef mince for £3.50 is going to convert non-Venison consumers..it may do once to try it, but not as a staple or beef replacement.

£6.99 for mince is a high price.

If you want to throw me some details, next time I'm up NWales Id be happy to buy some cuts, Mutton too if you have it. (We may have spoken about this in PMs in the past).

Why do you consider mince to be a by-product? It's not! It's a product in it's own right.
Also, price per lg doesn't really enter into people's decision whether or not to buy. Price per pack is what they look at. And there's no waste in a pack of venison, compared to, say, lamb chops. So although the price per kg may be high, the price per pack represents good value.

Tbf, I am a bugger for the small print on the shelves for price per kg and price per litre. Always looking.
