I'd posted before, clean shot 30kg fallow produces about 17 to 18 kg of usable venison. But, as @sauer and @75 say, that might not scale up or down for the various species nor take account of damage.
Bullet damage isn’t a problem if rite off the front end, I stand by a rule that an ex slaughterman taught me, if it takes longer than five minutes to sort it’s not worth it skip it!

@Norfolk Deer Search sounds like you have a similar attitude to me. When I've shot something I've gained haunches, tenderloin and hopefully some mince. The quantity depends on whether I've shot cleanly.
Perhaps someone could do the maths for me as I am not good very at it, if a GD pays you £2.0 kg and its perfectly shot ie head, he would only have 48% of the original weight. what does that work out per Kg.
