Hi
I have access to a quantity of pigeon breasts. I was wondering if anyone had ever tried pigeon and venison sausage, if so what was your recipe and what did the sausage taste like?
regards Alan
no, but my old lady cuts them longways into finger sized strips and flash fries them in breadcrumbs and then we dip them in a decent hot sauce [Linghams is a favourite]

She makes the pie cases too with it apparently, but she's deffo getting a bit doolally in her old age, I found she'd left it in her knicker drawer instead of the kitchen just the other day too!
I made venison, rabbit and pigeon game pie last year, first one was a disaster on the pastry side. Second one the boss intervened on the pastry and it turned out absolutely delicious.
Ive made venison & pork sausage in the past, as well as pigeon & pork burgers, dont see why a pigeon & venison sausage wouldn't work, reckon it would be proper tasty.
About 20 years ago I won a recipe competition in Shooting times with a pigeon burger recipe. I received a nice hip flask and a bottle of Appleton's Rum.
When I told the lads in the mess what the prize was for. The rum helped numb the pain of the monumental pi$staking I was subjected to.
