Anyone ever tried pigeon and venison sausage.

I have access to a quantity of pigeon breasts. I was wondering if anyone had ever tried pigeon and venison sausage, if so what was your recipe and what did the sausage taste like?

no, but my old lady cuts them longways into finger sized strips and flash fries them in breadcrumbs and then we dip them in a decent hot sauce [Linghams is a favourite] :thumb:

Been doing partridge breast the same. After a quick wack with a rolling pin.
 
Pigeon and venison together in a pie is popular in this house, but not tried sausage.
(No need yet - still munching through the last couple of pigs!)
 
I made venison, rabbit and pigeon game pie last year, first one was a disaster on the pastry side. Second one the boss intervened on the pastry and it turned out absolutely delicious.
 
Pigeon, venison and pork shoulder worked together well for a game version of Ragu all' Abrruzese.
 
Ive made venison & pork sausage in the past, as well as pigeon & pork burgers, dont see why a pigeon & venison sausage wouldn't work, reckon it would be proper tasty.
 
Ground pigeon breasts mixed 50-50 with a sausage meat pack from the supermarket makes the best hamburgers I have ever tasted.
About 20 years ago I won a recipe competition in Shooting times with a pigeon burger recipe. I received a nice hip flask and a bottle of Appleton's Rum.
When I told the lads in the mess what the prize was for. The rum helped numb the pain of the monumental pi$staking I was subjected to.
