Why if demand is rocketing ....are game dealers I’m hearing down south dropping prices quite dramatically ?

Exactly what I was going to say and have said a few times before.

I do not understand why so many stalkers rely on game dealers to take their carcasses for bottom end prices when, with a little work skinning and a bit of form filling to get food registered with their local council, they will have more outlets & maximise their income by other avenues. I have only approached two butchers near me and they are also screaming out for carcasses. It's just a shame I am not stalking as much as I'd like at the moment but when I get a carcass I know it'll be snapped up if I don't need it!

you shoot 4/5 reds and then you will be sick to the back teeth of skinning and butchering, dam sight easier to run them in and get what you get.

I do 4/5 reds a year for myself and run the rest in, im too busy to faff about

I would imagine (unfairly) many game dealers to be pretty incompetent at selling, or otherwise incapable of matching demand. Now that nearly all food passes through supermarkets, I suspect that most game dealers haven't developed an avenue into supermarkets.

That probably hits the nail on the head. Once supermarkets get a hold on something they sort out their own supply chain, and the little people get squeezed out.
Incidentally, the UK venison market is worth about £100m per year, and rising. Expected to reach £143m per year by next year. In Scotland alone, an additional 1200 tonnes per year are required to meet existing demand. Not much evidence of over supply in those figures. Shortage, more like.

Fine until you start knocking over serious numbers. Have you ever skinned 40 fallow a week? That’s what we were weighing in last Feb

From what I've heard it is a large part due to a flood of venison from other locations, mainly red from NZ and fallow from Spain. Seems like they will still take roe but fallow and red just doesnt have the demand at the present.
 
Quick update, Hampshire Game are now taking Fallow...50p/Ib (1/2 last years price)...if it wasn't that we 'have' to cull them, I wouldn't bother...certainly not worth doing it for the money.

If the numbers keep going up like they have in recent years we'll soon have .Gov paying us to manage the numbers. Maybe (.Gov) should increase the import tax so high that we can supply our own market again.
 
And from the mild, drier North, the two does I took this afternoon at close of play were both still showing very good fat coverage, cauls over the stomach and loads of suet, so doing well still (was asked to gove an update back up a bit); I usually find they start to melt a bit into February, as the unborn start to develop more and draw on the dam's resources.
