Got loads victorinox but they don’t have the colour I want, it’s for a project with kydexSwibo knives (bright yellow things) also used to be good. However, I seem to remember that Victorinox bought them out or something?
I use Victorinox. Do you not like them?
Hopefully some butchers will be along soon: they're the best guys to ask.

Many years ago when I was training as a chef. We had Sabatia for our sets from college. Work had Swibo and Victorinox. We boned out sides of beef etc and other than personal preference I can’t remember any being much better than the other.
Victorinox are good value for money and I like the shape and flexibility.
Stick to the good names you should be ok whichever you choose.
The advantage of some are the sheer numbers sold to the trade, you can get them cheaper than some “cheap” knives.
