Butchery knifes other than victorinox colour of handles for project

Swibo knives (bright yellow things) also used to be good. However, I seem to remember that Victorinox bought them out or something?

I use Victorinox. Do you not like them?

Hopefully some butchers will be along soon: they're the best guys to ask.
 
Are victorinox the only real go to knives for butchering deer.
Simple answer is no.
Many years ago when I was training as a chef. We had Sabatia for our sets from college. Work had Swibo and Victorinox. We boned out sides of beef etc and other than personal preference I can’t remember any being much better than the other.
Victorinox are good value for money and I like the shape and flexibility.
Stick to the good names you should be ok whichever you choose.
The advantage of some are the sheer numbers sold to the trade, you can get them cheaper than some “cheap” knives.

Got a few other makes to look at.
 
I got 5" flexible f dick and 6" victrinox flexible boning knives both are good. The f dick has a grippier handle and is maybes a wee bit handier to use.

Go to Nisbets' website. They have all sorts of butchery and chef knives in all colours.

I have a set that I bought from the Army surplus. There's a steak slicer, flexible boner, veg, large cook's knife etc. They've been excellent for this. All of the various blades were available with different colour handles. So if you wanted a blue, green, white, yellow and black handled filleting knife, you could take your pick. Seriously they've been good. Not some rubbishy dime store stuff, but really good blades. I opted for a different colour for each knife but then I only wanted one of each.

Just seen the comment re Nisbets. I'd agree. I use them too for the good stuff. But they do catering equipment which is I suspect, what you'll need.

CES have their own knives under the Caribou brand, F Dick, Swibo, Victorinox and others.

Their clearance sale is well worth a look - I ordered four knives last Friday and they arrived in the post Saturday


They have knives handled in black, blue, yellow, red and others, though not all are in the clearance sale.
