Any small producers willing to share their prices?

Would anyone who butchers a few deer and is a registered food business be willing to share their approx prices with me? By PM is fine.

Previously everything I've sold has been whole carcasses or broken down into manageable pieces but now I'm being asked for packs of dice / mince etc. I'm all covered from environmental health perspective and very comfortable on the butchery side but I have no idea where to pitch prices. There are plenty of options online but I don't have the overheads of the bigger companies, this is just the odd deer that I will butcher to cover a few of my stalking costs. It'll just be simple stuff like mince / stewing / steaks / loin etc.

Google is your friend! ive seen fillet anywhere from 20-40 quid per kilo. All depends on your customer base and your outlay to get it from field to fork. I always found the £5 bag a good seller. So 500g mince or dice, 4 burgers, 6 sausages or a steak each a fiver go down well

As Steve has said it will largely depend on what your outgoings are to get the product to the selling stage. My food miles from field to chiller is around 3 so I am happy to keep the cost down for the customer also.

I am fully aware that I am never going to make thousands from what I sell, but I do have a loyal customer base that appreciate the price I sell venison for.

I usually keep it all to round numbers to save on people wanting change etc

Sensible advice!!!

Yep, lots of googling already, but these are larger companies that do it full time and have significantly bigger overheads than I do. The smaller producers like myself don't tend to have websites with prices.

He forgot that membership is a privilege, not a right, and it continues at the grace of Admin.

It is a shame that he let his emotions take over, as I very much enjoyed his contributions.
The man could make a sausage and was very helpful in perfecting recipes of said sausages.

Will be missed.

I also think it’s a shame he’s gone. Seemed he got the wrong end of the stick and then overreacted but a lifetime ban does seem harsh after his contribution on here.

Yes, his advices were always useful, especially in relation to butchery, production at home, set up of home larder etc.

Perhaps his ban will be revoked at some point in the future, I suppose it's in the hands of the SD gods now. Anyhow, I digress, and so has this thread!

This info from a game dealer that I work with:

I don't have pricing details for the above, however it is useful to see the weights/portions.

Spoke to him yesterday and he regrets what he did, but.....Now in admins hands. Reverting back to the original subject, the £5 packet works well. But higher value cuts like haunch and loin I would say sell at a bit of a discount, otherwise they make expensive mince.

I have to say I’m surprised at the ‘lifetime ban’ and cannot follow admins thinking.

Not one of us is without emotion, which can get the better of us and cause us to make a bad call.

It is what we do afterwards that matters, express our regret, apologise and move on, in my opinion Woodsmoke has contributed enormously to our Forum, drawing from a great many years experience.

A severe rap on the knuckles and a temporary ‘cooling off’ ban would have sufficed. With a warning that a lifetime ban would follow unless attitude was changed.

No, stand behind your product and don't discount it. If people want quality they'll pay for it.
(Exception to that rule being big catering orders from restaurants etc, in which case a 10% discount is appropriate).
