Ah - it is if you have any level of manual dexterity or hand eye coordination. If, on the other hand, you make drunk 2 year olds look coordinated and composed, it can be challenging…Silver skin is easy
I should go back to it. It’s too easy just to get the vet to do it. She does it in about 3 seconds with no wastage and what looks like a single movement. I’ve asked her to slow down so I can watch and learn, and been met with a withering look ‘I am doing it slowly for you…’I do also struggle with this, although the way scott teaches it is pretty easy to pick up (not saying that I have mastered this by any means!).
Cut a wee nick in the end of the silver skin, and cut a wide enough bit of it so that you can get the whole of a flexi knife underneath. Flip upside down (so that silver is touching flat on board) and angle your flexi knife slightly towards the cutting board. then gently pull and a little wiggling back and forth as you do - doesnt work every time for me but its getting better!

I have 2 pieces of Para Cord hanging from the ceiling. Each with loops at 3 different heights for the hooks to go through. The electric winch is in the middle to avoid too many manual handling issues. I skin whilst hanging them from the front legs and then turn them up the other way to butcher them. Hardly any swinging.Currently i butcher with them hanging, less cleaning after, but the munties swing around a lot more. Oooh, wonder if I should try from 2 hooks instead of one. That would stop it.
