Scott Rea. Complete and utter git.

Long gone are the days of having some mud splattered leaf covered mangled mess of a car crash going into the freezer. A mate & myself watched his vids & we created a revolution of culinary delights. Muntjac lollipops are now the pride of the feast, instead of giving the ribcage to the dogs. And never a scrap wasted, Thank you Scott.
 
Love watching butchery videos find it very therapeutic tbh. The bearded butchers in the USA are also worth a watch especially when they do the big stuff.
 
Silver skin is my nemesis. I just don’t anymore - I get my wife (a vet with superb surgical skills) to do them!
I do also struggle with this, although the way scott teaches it is pretty easy to pick up (not saying that I have mastered this by any means!).

Cut a wee nick in the end of the silver skin, and cut a wide enough bit of it so that you can get the whole of a flexi knife underneath. Flip upside down (so that silver is touching flat on board) and angle your flexi knife slightly towards the cutting board. then gently pull and a little wiggling back and forth as you do - doesnt work every time for me but its getting better!

Scott won the Young butcher of the year award quite a few years ago, says it on one of his videos.

I love watching has channel on YouTube I have certainly learnt alot from him

I went out and got the victorinox knives he has and they are not overly expensive but they are brilliant. Most professional butchers use them I belive!

I should go back to it. It’s too easy just to get the vet to do it. She does it in about 3 seconds with no wastage and what looks like a single movement. I’ve asked her to slow down so I can watch and learn, and been met with a withering look ‘I am doing it slowly for you…’

I think the trick is to have a razor sharp semi flex.

I was having issues (which I was surprised with as hadnt previously) and then sharpened and stropped knife. Went back to easily cutting off the silver
 
Currently i butcher with them hanging, less cleaning after, but the munties swing around a lot more. Oooh, wonder if I should try from 2 hooks instead of one. That would stop it.
I have 2 pieces of Para Cord hanging from the ceiling. Each with loops at 3 different heights for the hooks to go through. The electric winch is in the middle to avoid too many manual handling issues. I skin whilst hanging them from the front legs and then turn them up the other way to butcher them. Hardly any swinging.

i like this idea a lot - will need to give this a go!

with regards ot the OP .. Yes its nice to see him promote and educate people and i am sure i leared a few thigns while i was watchign them... i however have one giant bugbear every time i watch his videos and this one is no different ... MATE take off all those jewelery!!! I am sure he washes his hand but those silver rings and big chain braclet continously touching the meat, with all the stuff on them and underneath them. But lets just assume he take them off after every carcas and give them a proper clean..... just as the post above, i alwasy wear a fresh pair of nitriles on when i butcher and if i need to do somthing different inbetween i just take them off and put a new fresh pair of gloves on...

That's how I do it. I do use mole grips when skinning munties though as the skin hangs on a bit more that it does on other deer. Skinning this way certainly saves a lot of hair getting on the meat as the fur is below the exposed flesh so any loose hair drops to the floor.
The important bit is right at the start. You must cut the front legs off at the bottom joint or the carcass will fall on the floor when you start pulling on the fur.
