What are you going to make with with what you cut or just tidying it up. Just use a sharp knife, do it when it’s fresh and you should have no issues.I’m cutting it up to produce dehydrated hide for dogs.

If you have it off, then a Stanley knife on to a big plastic cutting board, not much different than carpet on a bit of ply for technique...cutting way from you.I’m cutting it up to produce dehydrated hide for dogs.
