Cider

Just done another 8 tesco trays today, one water cooler bottle and 5 demi johns of juice.
Im comparing adding campden tablets and letting it sit for a couple of days before adding yeast to adding yeast straight away.
Already got some with wild yeast, and others with different yeasts.
Bottled some of the first lot to free up a demi, it was only half full and had stopped fermenting, quite pleasant but a little yeasty.
 
one of our local pubs yer in north devon used to refuse to sell you more than 3 pints of one of their local ciders,i would cause a temporary loss of lower limb function:lol::lol:.

Has any one either delibratly or accidently made cider vinegar?
Could it be a use for the dregs?
Add some live cider vinegar and it should go quickly. Keep it well away from your actual cider stash. Easier to get going with less acid cider.

Trying and keep the headspace to zero to save it oxidising (ie fill up to the neck of some sort of receptacle). All those yeasty etc tastes drop out over 6 months. You won’t want to wait but better into spring and best a year or more on. Or drink it and enjoy it but you’ll wish you hadn’t when you find one a year later and it’s got lots better!
 
I doubt there'll be much left by next year!
My friend who's being doing the cider with me reckons there's just about enough to last us until May!
I was told, make in the summer, finished by xmas, may be drinkable by easter, good in the summer.

No, you're quite right.
The difficulty lies in keeping your hands off it for that long!
I sympathise! I always get told off for trying it too early. My stuff is always better after spring when most years it goes through malolactic. Not always loads left by then…
