White discharge from haunch

Roe doe shot last Wednesday, been hanging in my fridge. Looked extremely fit and well, nodes were normal. Cut the shanks off one of haunches and a couple of minutes later noticed this leaking out of the haunch. Sticky white thick fluid, consistent texture and colour, no discernible smell. Any thoughts? Can’t see any obvious injury and it doesn’t really look like infection.

Is that coming out of the joint in the bones where you separated it, or out of the meat itself?
I've come across similar fluid accumulation in joints before, and not been bothered about it, but I would be bothered about it if it was oozing from within the muscle bundles. Could be infected gland or abscess deep in there somewhere.

I didn’t notice the fluid when I jointed the haunch but then again I made the cut and then placed straight onto the tray. I’ve not cut anywhere else and can’t see that it’s coming from the muscle tissue.

Condem the haunch? I’m not so sure I’d get my wife to eat it now that she’s seen it even if it is ok!

Bone it out into separate cuts and see what's what inside before making any rash decisions.

I suggest you disect it and locate the source. I have seen similar in roe haunch. May be deeply embedded thorn or alike.

Why no reason at all to bin it.
As VSS says just split it into joints and locate the source. If need be discard a bit where you find the abscess. Just wash any other bits dry and freeze.

Not a hope in hell I would do that.

If you want to then crack on. As said I'm not that desperate

I appreciate everyone’s opinion on this but it’s not just me consuming it, therefore I’m condemning the haunch (even if it were it would be the same outcome). However I will open it up and see what I can find.

Definitely not appetising. Thick and sticky - thought it would have had a whiff about it. Doesn’t have that really nasty infection look but it is pretty grim. I had three to pick from after a productive morning last week, thought I’d picked the best one, clearly not!
