Venison tongue

I've been wondering for a while if tongue ( my favourite cold meat) could be made with deer? Well here's your answer, courtesy of a slightly amended Hugh fearnly whittingstall recipe, quite firm compared to the bought stuff but certainly there flavour wise, this was done with reds but I reckon all would work equally well, I'll warn those trying this, it's a bit fiddly to skin

the dogs wouldnt forgive me if i kept tongues... roe ...too small to bu55er about with and i chop em up for dogs they LOVE it

I save all the tongues, roe, munty and cwd normally.
Brine then simmer, peel and dice set in a jelly made from the stock. Very nice on toast
