Anyone want to warn me away from any of this kit?

I think it should be compulsory for the Op to endure everything he indicates a desire to be spared in his sporting rifle & deerstalking 'journey'. What is this nonsense that speaks of a "reasonable financial arrangement" with one's partner for the purchase of stalking kit!

Ditch the Hawke scope. I was just using a friends one the other day and although it had good magnification the clarity was poor. They are a light weight build and when you do a proper stalk dragging your rifle around you need a scope that is built like a tank and wont get knocked off zero.
You need to have trust in your set up that even if you give it a bit of a knock that it will shoot where it was hitting last time you used it.

I purchased a Minox 3-9x40 scope for my rimfire and they are good quality for the money and a reasonably heavy build.
Cant go wrong with a Schmidt & Bender 8x56 2nd hand scope though.

I would recommend a harris bipod 13-27"(or similar) good length for shooting in long grass etc.
