Found this interesting and worth a gander .

Two things struck me though ,
Firstly, they start out by ignoring all amateur stalkers and pretty much deliberately excluding them from the discussion ( They talk about the cost of culling etc)

Secondly, how the hell did that guy get his Teckel to behave so well ??????

 
If people can't buy venison locally it's because they either don't want to pay the price of it butchered and presented ready for consumption at their local butchers or farm shop

or

they don't want to buy a carcass from a local stalker or someone on 'giving up the game' and have to butcher it themselves.

There is a cost associated with butchering a carcass and packaging it. It seems most of these people who complain about no local venison want the meat prepped ready at the price the game dealer pays.

You're never going to buy a venison steak at the same cost as beef.

Mr Play fair has been ‘developing the market’ for how long exactly? ISTR him being in his post since I started ( —unsubsidised, just to say) 20 years ago…

It is a shame that the industry does not recognise the Rec deer manager. You w3ould think managing over one third of the deer population would give us just a little clought lol. Maybe we should ask why this happens and why all the cash is facing north.

I would also have tp agree on the standards ,, now don't get me wrong , there are very capable good stalkers who have a high standard of venison to be presented that don't have DSC1 or 2 , but on the down side , dsc2 is easily got now via 1 stalk , an my view is the bar has been lowered to obtain it , resulting in poorer quality venison entering game dealers ,, I no I'm gonna get flack for saying it , but that's what I've seen

What I have seen, and we have all seen it on videos posted on here, is that the long-standing stalkers and "professionals" don't always have the best regard for the carcase post-gralloch to the larder.

I don't think qualifications determine this, its all down to how the individual considers hygiene regarding the carcase.

I had a group of industry people, including one who appears in this video, visit me at my larder this week for a chat and they were actually very keen to understand how they could enable the recreational stalker to shoot more deer. It was a very productive visit I thought.
