Did this on my birthday for a couple of friends with a loin from a fallow pricket. It was outstanding, too scared to do it again in case it doesn’t live up to the original!

and yes black pudding works (mcsweens is best in my opinion) but so does haggis instead of the mushroom duxelles

The worst I ever had was in Montevideo, you cut into it and chased it round the plate, a straw would have been the best option, apparently the main ingredients was chicken livers.
