I thought this should have its own thread as I often look in here for recipes so having each recipe on its own thread is helpful.
If you like Indian food you’ll love this, plus if you don’t like your liver too livery this is the way to go. Just don’t overcook it as it will be rubbery, it’s ok if it’s slightly pink.

- 1 roe sized Liver trimmed and sliced. Or maybe half a red deer liver, (double up everything else if your doing a whole one.)
- 1 Onion , thinly sliced
- 2 Green Chillies, slit
- 6 cloves Garlic, finely chopped
- 1 inch Ginger, finely chopped
- 1/2 teaspoon Red Chilli powder
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Garam masala powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoons Black pepper powder
- 1 sprig Curry leaves
- Salt, to taste
- 2 teaspoon Sunflower Oil
- Carefully remove the thin membrane from the liver by nicking it with a knife and then gently working your finger between the liver and the membrane, then trim off the sections with larger blood vessels and slice the remainder into strips about 1/2 inch thick. Soak the liver strips in water with some salt and turmeric powder while you prepare the rest.
- Next add oil in a wok or kadai and once hot add curry leaves, slit green chillies and onions. Cook onions, ginger and garlic on medium flame till they start to brown and soften. This will take 4 to 5 minutes.
- Once the onions have softened, add in turmeric powder, chilli powder, coriander powder, garam masala and strained liver.
- Saute liver well and make sure all the masalas coat the liver pieces and liver is cooked. This will take about 5-10 minutes.
- Finally add in the pepper powder and saute for another minute. Check the salt and spices and adjust according to your taste.
- Once done, turn off the heat and transfer to a serving bowl and serve hot with some rice or on some nice toast.
