Struggling to get a razor-like edge on my PHK. Any help with confirming the original factory grind angle and/or general tips for this steel would be appreciated.

Ok, I have one of these and because of the blade thickness and angle you will be looking at a 30 degree ish angle to get a sharp edge.
I use a lansky sharpener and you have to position the blade just right to get it to create the right angle.

That looks like it put up quite a struggle. 🤣
That was before I got the lansky!!
It’s such a thick blade that getting the right edge angle is hard.
A lot of the blade scratches are from a lot of use as well as some wayward sharpening action! I must get them polished out at some point!
 
Part of the problem - I strongly suspect - is the no doubt crass belief one may 'abuse' such a mightly impressive-looking blade, with no consequence, if attacking roe cartilage & bone with gay abandon.

It does make you feel invincible!!
As said above, I use the lansky probably twice a season in it (winter season that is) and I use one of peter’s strop boards after every couple of stalks and grallochs
 
Axe puck maybe?? Those knives are bloody ridiculously thick. I have the filleting knife which is wholly inappropriate for filleting but just about right for the gralloch. I use a Fallkniven DC4 stone, a stropping board and a little gay abandon (😂) to sharpen it. I’d never try to use a lansky or similar on a convex blade that thick. Mouse mat and wet and dry paper is a good shout though.

I abuse my other knives with as much abandon as I did the Fallknivens, and have no trouble keeping them sharp.

They’re genuinely difficult. As someone suggested - treat it like an axe blade and it gets a bit easier.
 
I love my PHK but send it to @Longstrider annually for him to sharpen and then use a strop after each use (at the end of the day.) It has done a dozen hinds in a day with aplomb
 
I tend to draw along the edge of the blade with a black perm marker, just the very edge itself, then when you are removing the marker with your sharpening strokes you know your hitting the right place.
That 3G steel is an absolute bastard to sharpen mind, I got rid of a tk2 knife for that reason. But that technique does work.
Nice knife though, always fancied one.
 
After using loads of different sharpeners I now just use Lansky Crock Sticks to touch up my Fallknivens before I go stalking.
I have never used anything else now for over 10-years. I sharpen the edge of the knife, matters not how thick the blade is.
They get shaving sharp in less than 5 mins, a quick strop and done.
