Bladders can be really tight to extract of they're full. Removing penis and sawing pelvis is a good option if you struggle - and some gabe dealers want it split anyway.

I would only trim away green, even then I might condemn carcass if unsure whether unseen contamination.

Urine is fine, rinsing is permissible, kitchen roll might be better/safer.
I’ve had both a face and mouth full of fallow **** as well as a spray of fallow milk when cutting out the udders…

Dont worry about time, carcass is cooling as you work, a clean carcass is the most important thing
 
Many many different ways to Gralloch, including lots of different geographical ways. A lit does depend on terrain and what parts of the animal are used.

In Africa, most beasts are recovered entire back to the larder as every bit of the offal and intestines are used.

With Roe, and presume other small deer the anal tract is really quite fiddly. I leave the pizzle, bladder and anal tract in place. First open up the throat, separate the food pipe from back of windpipe, cut it and tie it off in a double overhand knot and separate it as far as possible down to body cavity

Roll beast onto its back. Lift belly at the base of diaphragm, make a small 1” cross cut, get fingers inside the body cavity, and then with forefinger along the back of the knife, blade pointing upwards and other hand pulling the skin upwards open up the body cavity down to one side of the pizzle, no need to ho right down.

Roll beast onto its right hand side. The liver should now be on top of the rumen. Slowly work your hand over the rumen between the liver, breaking all the connective tissue between. Follow the rumen up to its neck, get your fingers all the way around it and squeeze it closed. Then a steady pull to remove it and the food pipe from the cavity. Don’t pull it too far - you want to leave the intestines all attached. Find the large intestine with all the poo pellets. Squeeze these back towards the rumen leaving a good few inches clear of pellets. Cut this and tie off the bit still attached to the carcass.

Remove the intestine and stomach and check the lymph nodes.

On the carcass side you should be left with the last of the lower intestine neatly tied off, with bladder still intact in pelvic girdle. The liver and kidneys remain. You can now extract the beast. In the old days we always took the heart / lungs off the hill as they went to the dealer for inspection. Nowadays, i open up the diaphragm and pull the heart and lungs out. But be careful- the bullet will often make very sharp and nasty bone fragments that can easily cut your hand.

It takes time for an animal to cool down. They have a very good insulating coat. By far the best is plenty of airflow so that the inside of carcass forms a skin and any dampness on the coat dries out.

Two or three hours is not going to do any harm to the meat. Worst is putting it into a tightly sealed game bag for a long period of time. If you do have travel long distance have it in a tray with plenty of air flow.

At the larder you can split the H Bone in the pelvic girdle and take out the anal track. However some dealers prefer the H bone and pizzle all intact as they get good money from Chinese medicine.

I have witnessed these gralloching skills - what he doesn’t say, is that could be doing it in his best dinner jacket, and after a quick wipe of his hands, or removing his gloves, he could sit down for dinner in polite company.

I on the other hand cannot achieve this level of precision.

I am now a very old stalker, but I still remember, with pride, my first solo effort. You beat me by at least an hour! Well done Sir. Don't worry about a thing. Remember, the more you practice, then the luckier you get.
 
I would suggest that pretty well all of us have had more then one imperfect gralloch and its is definitely a case of practice makes perfect. My first solo gralloch was on a fallow in 2013 and it was far from perfect and took an age as well. I do still make mistakes as its very easy to nick something with a knife.

Personally I much prefer a bigger deer from a gralloch perspective. A big anal cavity is much easier to deal with (and keep any filth to yourselves :lol: )
 
Big deer suspended are the easiest gralloch by far, its not always easy to get them suspended when far from the vehicle though!

My first gralloch took a while. Which given the day job was embarrassing!
If you have contamination then rinse with salt water 2tsp per litre. Just water can damage the carcass and make infection more likely. Bad areas from shot, trim them off so any bacteria cannot swarm
Like others here, remove green and red at the site and do the rest at home.

And very difficult when on the open Scottish Hill. I have tried suspended a couple of times. Much much prefer doing it on the ground. But then that’s how I have been doing it for many years.
 
I have shot a lot of muntjac.

I always have a smile on my face when they’re female thinking ‘that’s an easier gralloch’

Males always present more work in my opinion.

It's not a race.
There's no prize for the fastest gralloch.
Take your time to do a good job.

Don't fret about bursting the bladder. It's green stuff you need to be worrying about, and potential contamination from outside the carcass, not a bit of pee (which has extremely low bacteria levels anyway).
Don't hose out carcasses. That just makes a small mess into a big mess. Any areas you're worried about should be trimmed away once the carcass has cooled and set.
Slow cooling of a carcass is best, so the fact that you hadn't pre-cooled your fridge is actually a good thing. Putting a warm carcass into a cold fridge is not good for meat quality.

Just keep on as you are, and it'll get easier.
I'm pretty hopeless at gralloching in the field. Always seem to make a mess of it. In your position, only 5 minutes from home, I'd have taken the carcass back to the larder unopened and gralloched it there, with better facilities.
 
I am new to stalking, but please put me right if i have this wrong. A carcase should never be washed, as any contamination is spread throughout rather than being removed. Thoughts?

We use blue paper towel and wipe out the inside of fallow/reds as they go to the dealers as it leaves the rib cage nice and shiny after a final trim.
In the chiller the gone the next day. Washing can/will flush the muck back through the entrance/ext holes and it will sit on the out side of the rib cage and under the fur layer next to the rib cage :tiphat:
 
You'll notice the flesh that has urine on reacts similar to fish in contact with lemon juice.
It will affect quality and taste, more so with carcass left in chiller longer.
Next time gralloching use the back of your hand to drain bladder by pressing before removal.
