I shot the last does of the season a week ago and finished butchering them today. I took off the meat from the front shanks and legs for stewing meat so I felt like stew and dumplings tonight. The sinew broke down to make the smoothest gravy with no need to thicken. I didn’t have any wine so used brandy. No complaints from the family….
