Roe loin carpaccio. Marinaded overnight in Dijon, Szechuan pepper, olive oil and garlic, rolled in cracked black pepper then seared all round, , cooled, chilled and sliced thin as possible then gently rolled flat. Served cold with cornichon and parsnip crisps.

Had a friend and his family round yesterday and I smoked a boned and rolled wild boar shoulder which they had never had before. Think I got some converts with that! I didn't take a picture of the final result as we were a few drinks in and extremely hungry but I cab assure you that after 8 hours it was borderline perfect

Nowt fancy, just an honest Roe buck stew , 4hrs in the oven at 150,
Rustic style ,( it tastes better than it looks ) it will demolished with crusty rolls

I'm feeding the lads tomorrow, we have a work day on the shoot

Tonight's tea Fallow venison curry, various spices red pepper white onion chopped up fine cooked off first thing this morning, then put into slow cooker. Job done👍

Why not post some pictures of some pure venison too, you are clearly cooking delicious food ….

Nice :thumb: that’s a favourite dish of mine too, one of the best ways to eat Rabbit in my opinion. I recently sent a YouTube clip to someone off this site showing how to make it , I will include it here:

Such a super dish and so simple cheap and quick to make. My German grandmother used to make it when I was little, but using chicken, because around time WW2 when they had virtually nothing to eat and many people were starving on the European mainland , my grandmother used to raise rabbits in their garden for food for her family. Unfortunately my mother had one as a pet too, and when things were particularly hard, that had to wind up on a plate too. Not nice for her but better than them having nothing to eat. Hence, I believe that’s why she used to cook it for me and all her grandchildren using chicken.
Still, I prefer it with wild .22lr head shot rabbit.
