After my stalk with @Norfolk Deer Search I skinned and butchered the CWD with my knife made by @snake_2586

Made myself a scrap pile and had a go at sausages today, they turned out quite well.

They taste bloody brilliant and very festive.
They look good. Did you use the recommended amount of hunters feast? I found that you couldn’t taste the venison. I halved the recommended amount and thought it was perfect and better value for money. How much fat did you put in them? I use 25% of the meat weight as pork fat, i.e. 1kg venison and 250g pork fat.

I do like wine or port in them but use my own recipe not the hunters feast for that.

It was 650g of venison to 350g of belly pork, I used around 160g of the Leonards mix, didnt measure the liquid, just went by look and feel.

The mix is quite strong with rosemary.
 
Sika loin pan fried with garlic, ginger, blackcurrant jam, squeeze of lemon and soya sauce.
Loin then rested while sauce was sieved, roasties, mash and a bit of carrot thrown in for colour on the plate.
Served with a glass of Chateauneuf du pape and then another glass with a frozen Kit Kat for dessert, not too shabby at all.

Awesome grub here folks😋
Last night I did diced rabbit shallow fried with onion, herb salt and black pepper.
Added small diced potato and carrot.
Added boiled water to simmer and the thickened the mixture to a stiff consistency and served on cheese on toast.

Stunningly lovely looking dog. I bet she’s quite a speedy number and no doubt a fur slayer . Very cool dog. Interesting how that picture makes her look quite big but in the other picture she is smaller than a piece of toast .
